LEMON ZEST
The
citrusy zing of the outer covering of lemon makes for a nice addition
to cakes, biscuits, soufflés and other desserts. It’s easy to get. Take
the peels left over after making juice. Use a fine grater and make sure
you remove the bright yellow zest only. Avoid the white pith, part which
is bitter. Zest can be used in combination with other herbs such as
mint, basil, rosemary, thyme and parsley.
