- Preparing the Green Figs: Start by scalding the green figs until their skin becomes easy to peel. Once scalded, transfer them to a bowl of cold water. Gently scrape off the upper skin from the figs and place them in another bowl of cold water.
- Turning the Figs Green: Cover the figs in the bowl and place them on a gentle fire until they attain a vibrant green color. This step is crucial for the preservation process.
- Measuring and Sweetening: Weigh the green figs, and for every pound of figs, use an equal amount of sugar (1:1 ratio). Also, add a pint of water to the sugar in a saucepan and boil them together, removing any impurities that rise to the surface.
