Ingredients:

  • Green figs
  • Sugar
  • Water
  • Lemons

Instructions:

  1. Preparing the Green Figs: Start by scalding the green figs until their skin becomes easy to peel. Once scalded, transfer them to a bowl of cold water. Gently scrape off the upper skin from the figs and place them in another bowl of cold water.
  2. Turning the Figs Green: Cover the figs in the bowl and place them on a gentle fire until they attain a vibrant green color. This step is crucial for the preservation process.
  3. Measuring and Sweetening: Weigh the green figs, and for every pound of figs, use an equal amount of sugar (1:1 ratio). Also, add a pint of water to the sugar in a saucepan and boil them together, removing any impurities that rise to the surface.
  4. First Soaking: Once the sugar and water form a syrup, add the green figs to the mixture. Give them a couple of washes within the syrup. Then, set them aside until the next day. Repeat this process for four or five days, allowing the figs to absorb the sweet syrup.
  5. Second Boiling with Lemon Twist: After the soaking period, bring the figs and syrup to a boil once more. At this stage, add an additional pound of sugar and the zest of 4 lemons to the mixture. Also, add 3 pints of water for every 3 pounds of sugar used and two pounds of figs. To ensure the syrup penetrates the figs, make a small hole in each fig with a skewer.
