If you're looking for a natural remedy to soothe your cold symptoms, these delectable liquorice balls will do wonders. Made with fresh English liquorice, this recipe offers a refreshing and effective way to ease your discomfort. Follow the simple steps below to prepare this cold-fighting treat:

Ingredients:

- 1 pound of fresh English liquorice

- Hyssop water

- Cold's foot water

- Red rose water

- Half a pint of each water

- Half a pound of white powdered Sugar candy

- Musk and amber (optional)

- Fine Sugar

- Gum dragon steeped in Queen of Huny Water


Instructions:

1. Preparation: Begin by scraping the fresh English liquorice and cutting it into small pieces, or "Bitts." Then, bruise the liquorice to enhance the infusion process.

2. Infusion: Place the bruised liquorice in a jug or tankard, and add half a pint each of Hyssop water, cold's foot water, and red rose water. Cover the container tightly and let the mixture infuse for 24 hours.

3. Straining: After 24 hours, strain the infused liquid through a thin strainer to remove any solid particles.

4. Boiling: Transfer the strained liquorice juice to a container and set it on a charcoal fire. Allow it to boil at a reasonably fast pace until the volume reduces to about half and starts to thicken.

5. Sweetening: Add half of the powdered and sifted white Sugar candy to the thickened liquorice juice. Continuously stir the mixture as it continues to boil.

6. Final Touch: Incorporate the remaining half of the Sugar candy into the mixture and continue stirring. To test the readiness, drop a small amount of the mixture onto a plate. If it comes off the plate cleanly, it's done.

7. Optional Enhancements: For additional flavor and aroma, consider adding a little musk and amber to the mixture.

8. Second Round of Pounding: Remove the mixture from the fire and place it in a fine mortar. Pound it thoroughly until it turns white.

9. Making the Balls: Mix the pounded liquorice with some fine Sugar to form balls. To achieve the desired consistency, consider adding a little gum dragon steeped in Queen of Huny Water.

10. Drying: Place the formed liquorice balls in a stove or warm, dry place for them to dry thoroughly. Once dry, store the liquorice balls in an airtight container to keep them fresh.
